Brinjal Capsicum dry fry.

Brinjal is not a favourite vegetable. So combined it with Capsicum and the side dish was too good for curd rice. I made it a bit dry. If we make a slight gravy, I guess it would be a good combination for chapathis too.

Ingredients:
Brinjal – 200 grams
Capsicum – 100 grams
Onions – 75 grams
Tomato – 50 grams
Coriander powder – 10 grams
Garam masala powder – 5 grams
Chilly powder – 10 grams
Sambar powder – 5 grams
Oil – 5 grams
Turmeric powder and Salt to taste

Method:
  • Chop the brinjal length wise and put it in bowl of water.
  • Chop the capsicum lengthwise.
  • Finely chop the onions and tomatoes.
  • In a kadai, pour oil and add the onions. Saute until onions become translucent.
  • Add the brinjal, capsicum, tomatoes. Add salt and turmeric powder and mix well.
  • Sprinkle a handful of water. Cover and cook for about 5 minutes. The brinjal and capsicum should be cooked by then.
  • Add the coriander powder, garam masala powder, chilly powder and the sambar powder. Mix well.
  • Allow it to cook for another 2 minutes.



Hot brinjal capsicum dry fry is ready!
