Idiappam with Ragi | String hoppers with Finger Millet

Idiappam is also one of the favourite breakfast dishes of Keralites. I have already posted the basic idiappam recipe. Idiappam is generally made with rice flour. Here I am presenting a healthier version of idiappam made with ragi flour / kuvaragu - finger millet flour. Ragi looks like small balls like that of mustard - so I always keep wondering why was it named finger millet.

Finger millet has lot of health benefits. Of late it is promoted largely to prevent and cure diabetics. Finger millet is very high in calcium, rich in iron and fibre, and has a better energy content than other cereals. Because of these characteristics, finger millet is prepared as a porridge and given to infants. I took a mix of ragi and rice flour since I felt ragi doesn't have enough binding properties. It doesn't have that stickiness. So I mixed little rice flour to the ragi flour rather then making the idiappams completely out of ragi flour.

Some side dishes that would be a good accompaniment with this idiappam are listed below.




Ingredients:

Ragi flour - 2 cups
Rice flour - 1 cup
Salt - to taste
Water - 1.5 cups
Oil - 1 tbsp
Grated coconut - 5 tbsp




Method:


  • Take the rice flour and ragi flour in a bowl. Add salt and mix well with a spatula.
  • Boil the water. Add one spoon of oil to the boiling water and mix well.
  • Pour the hot water little by little and mix the rice flour with a spatula. Keep repeating this and make a a dough. The dough should be of chapathi dough consistency.
  • After about 5 minutes, when the dough is cooled down a little, but still warm, knead the dough with hand. Knead it well and make it into a soft ball.
  • In a idli plate, add a spoon of grated coconut in each of the mould.
  • Put the dough in a press and mould, which has idiyappam plates with tiny holes and press to form strings in the idli plate.
  • Steam this for about 10 minutes.


Serve healthy idiappams with coconut milk and sugar !!!

  9. Ragi is being used extensively in the areas where it is grown locally, for generations both for it's low glycemic index and cheaper price over rice. Now it is gaining popularity in other areas too. I use ragi regularly in my kitchen and would love to try your version idiyappam.
