Lapsi Rava Kozhukkata | Dumplings made with broken wheat

Lapsi is broken wheat. I don't know if this is malayalam word but this is how keralites call it. From the time broken wheat was introduced into kerala cuisine it is called lapsi rava. 

Traditionally wheat or wheat products were not part of kerala cuisine. But with the introduction of diabetes and other similar diseases, keralites are using more of wheat in their daily diet. These days in most of the houses the older people take lapsi rava kanji for their dinner. In kerala we get very fine broken wheat similar to sooji which is called lapsi rava.

While googling for recipes from lapsi rava I also found out that lapsi by itself is a name of a dessert which the gujaratis make. Lapsi rava is prized as it’s highly nutritious and is unrefined wheat high in fiber and manganese. Lapsi rava or broken wheat is an excellent source of complex carbohydrates which provides instant energy, amino acids that provide protein, vitamin B6, vitamin E, vitamin K, iron and folate. Lapsi is good for diabetes as it releases sugar very slowly and energizes the body and prevents high cholesterol, and high blood pressure. Since I have already posted pulav with broken wheat I thought of making these kozhukkattas. These would be a very good breakfast dish and also an ideal dinner.


Ingredients:

Lapsi - 150 grams
Coconut (grated) - 50 grams
Oil - 10 grams
mustard - 5 grams
Urad dal - 25 grams
Channa dal - 25 grams
Curry leaves - few
Red chilly flakes - 1 tsp
Salt to taste


Method:


  • In a kadai, pour oil. Add mustard. When mustard splutters, add urad dal and channa dal.
  • Fry for about a minute until the urad dal and channa dal turns pink. Add curry leaves and red chilly flakes.
  • Pour water. I added 2 cups of water for one cup of lapsi rava. Add salt and grated coconut.
  • Once the water boils, reduce the flame to minimum and add the lapsi rava. Mix well. Keep mixing until all the water is consumed. The rava should be little mushy.
  • After about 5-10 minutes, when the lapsi mixture is still warm enough, take a handful of the lapsi rava mixture and make oval balls. 
  • Have a cup of water nearby. Dip your hand in water in between making balls to sustain the heat.
  • Keep the oval balls in a idli cooker. Steam for 10 minutes. If using pressure cooker, don't put the whistle.


Kozhukattas are ready!!! I served with tomato chutney and coconut chutney.


Notes:


  • You can also use broken red chillies instead of red chilly flakes.

  8. We prepare the dish using rice rava in Andhra. Cracked wheat version is definitely healthier over that one.
