The next item on my list of bakes was to make a muffin. H is a lover of sweets. Anything sweet he will immediately have it. So I first wanted to try out my hands on a couple of sweet recipes in Baking.
The name 'Muffin' either comes from the French word 'moufflet', meaning a soft bread, or from the German word 'muffe' which is the name for a type of cake. There are two types of muffins - English and American. What 'American-style' muffins means is that the muffins are made, not from a yeast dough like the English Muffin, but rather they use a chemical leavener (baking powder or baking soda). Maybe it would be better to describe them as a cross between a bread and a cake.
I saw the recipe for blueberry muffins in the joyofbaking website. I have a mulberry tree at my place and one day I had the chance to pluck lot of mulberries. Normally we eat the mulberries as is. But this time I decided to make some muffins with the mulberries instead of a blueberry muffin. The muffins were a super - duper hit. This recipe is very easy. Please try it out.
Makes 10 standard sized muffins;Preparation time 15 mins; Baking time - 25 mins
All purpose flour / Maida - 2 cupsBaking powder - 2 tsp
Baking soda - 1/2 tsp
Salt - 1/4 tsp
Sugar - 3/4 cup + 2 tbsp
Oil - 1/4 cup
Eggs - 2 (room temperature)
Buttermilk - 1/2 cup
Vanilla - 2 tsp
Mulberries - 1 cup
Method:
Preheat the oven to 400 F/200 C. Line a muffin tin with liners or grease with oil. Mix the first three ingredients in a bowl. In a large bowl, whisk the eggs with sugar.
Add the oil, buttermilk, vanilla and whisk again
Add the dry ingredients slowly and mix until no streaks of flour remain. Do not beat or mix more than needed.
Fold in the berries with a spatula.
Fill in the muffin tin until 3/4th.
Pop in the oven for 5 mins and reduce the heat to 350 F/180 C and bake for another 17-20 mins or until a toothpick inserted comes out clean. Allow to cool it a little and serve warm.
This muffins can be stored in the refrigerator for a couple of days.
Note:
Do not open the oven door after 5 minutes when you reduce the heat.
You can replace mulberries with any type of berries - blueberry, blackberry, strawberry.

ReplyDeleteWe too had a mulberry tree but in the front yard and the mulberries would disappear, anyway those muffins look great.
ReplyDeleteWhen I was a kid my neighbor had mulberry tree and we would just pluck them off the tree and eat. You made me nostalgic. Mulberries might have been a nice substitute for blueberries.
