Veg fried puttu is the fool proof recipe that I fall back to most of the times when I have left-over puttu. Thats because this is my favorite recipe and a pretty good way to include many veggies in your diet. I got this idea from the veg pulao or the veg rice that we make often.
I always have stock of carrots, beans, onions, tomatoes at home. With these I feel I can manage any situation. The time taken to prepare this recipe is just 15 minutes. A quick and healthy dinner will be ready in minutes. So over to the quick recipe.
Puttu - 1 cup
Onion (finely chopped) - 1
Finely chopped vegetables - 1/2 cup (check notes)
Tomato (finely chopped) - 1 small
Green chillies (finely chopped) - 1
Garam masala powder - 1 tsp
Oil - 1 tsp
Cloves - 2
cardamom - 1
cinnamon - 1/4 inch stick
ginger (finely chopped) - 1/2 tsp
coriander leaves - few
Method:
- Steam the puttu and keep it ready.
- Microwave the finely chopped vegetables for about 4 minutes so that they are half cooked.
- In a kadai add oil. Add all the dry spices (cloves,cardamom,cinnamon). Fry for 10 seconds.
- Add the finely chopped onions, green chillies and ginger. Fry until the oil turns translucent.
- Add the microwaved vegetables and finely chopped tomatoes. Add salt. Fry until the tomatoes gets cooked and there is no water left.
- Add garam masala powder. Mix well.
- Add the puttu and mix well. Fry for about 2-3 minutes.
- Garnish with coriander leaves and serve
Veg fried puttu is ready!!!
Notes:
- I used beans, capsicum, cauliflower and carrots.
- We can make it chinese style by adding soya sauce / tomato sauce / chilly sauce
- I sometime add one egg in the end. Mix it with the cooked vegetables and fry until the egg scrambles and then add the puttu.
