While browsing and searching for various recipes using kovakkai - I came across this gujarati special - tindora nu shaak. This is a very easy recipe and can be paired with rice as well as roti. The beauty of this dish is the minimal use of spices. We couldnt resist eating it. I actually ate it as such just like a salad. Try this out...
Ingredients
Tindora (Kovakka) - 200gms
Oil - 2 tsp
Hing - a little
Turmeric Powder - 1/4 tsp
Chili Powder - 1/4 tsp
Coriander Powder - 1/2 tsp
Salt to taste
Mustard - 1 tsp
Method:
- Slice the Tindora or kovakkai into 4.
- Heat oil in a pan. Add mustard. Once it splutters, Add the hing.
- Then add the tindora and turmeric powder. Saute for a couple of minutes.
- Add 1/4 cup of water. Cover and cook in slow flame.
- Add chili powder, coriander powder and salt. Saute for another 2-3 min. or until all the water is evaporated.
Tindora nu shaak is ready!! Enjoy this with rotis.
