Avarakka (broad beans or lima beans) is another category of
vegetable that is not preferred by many of us. But this vegetable has high
fiber content and also helps in restoring iron.
Ingredients:
Avarakka – 250 grams
Onions – 50 grams
Coconut (grated) – 25 grams
Red chilly flakes – 5 grams
Turmeric powder and salt to taste
For Tempering:
Oil – 10 grams
Mustard – 10 grams
Curry leaves – few
Method:
- Finely chop the onions and avarakka.
- In a kadai, pour oil, add mustard. When mustard splutters add curry leaves, chilly flakes and onion. Saute for about a minute.
- Add the chopped avarakka, salt and turmeric powder. Mix well.
- Add the grated coconut. Pour a little water. Cover and cook.
- When the avarakka is cooked completely, check that there is no water left and switch off the stove.
Avarakka thoran is ready!!
This is a great accompaniment to sambhar and rasam.
