Garlic chutney

We are starting with the Mega Marathon this month. Valli has given us quite a few options and I have chosen 5 ingredients for 5 weeks. The other option was one ingredient for the whole month or one category for whole month or 5 categories - each for a week. Though I am not completely ready at this point in time, yet I am confident of completing this mega marathon.

The first ingredient I have chosen is Garlic. Garlic has lot of health benefits. Garlic is highly nutritious with very low calories. Garlic can combat sickness, including the common cold. The active compounds in garlic can reduce blood pressure. Garlic improves cholesterol levels, Which may lower the risk of heart disease. In addition garlic is also favoured for treating Alzheimer's and dementia. Garlic improves bone health and helps detoxify heavy metals in the body. The list is endless I guess.

Garlic is easy to include in your diet and tastes absolutely delicious. But very rarely it is the main ingredient in a recipe. With some difficulty I zero'ed in on 3 recipes where garlic is the main ingredient. Starting this month's cooking carnival with Garlic chutney.


Ingredients:

Garlic (small variety) - 15 flakes
Dry Red chilli - 6
Coconut, grated - 1/4 cup
Asafoetida - A pinch
Salt - As needed
Tamarind (optional) - A pinch
Tomato - 1

To temper
Oil - 1 tsp
Mustard - 3/4 tsp
Curry leaves - few


Method:

  • Peel garlic. In few drops of oil, roast red chilli until deep red. 
  • Roast garlic just until it turns golden here and there.
  • Dry roast coconut until dry and fragrant. 
  • Fry the tomatoes until they are cooked along with asafoetida. 
  • In a mixer, grind chilli, coconut and salt first, later add garlic, tomatoes and little water and grind to a smooth paste
  • Temper with mustard, curry leaves and mix with the chutney.


Garlic chutney is ready!! Serve with dosas.


Notes: 

  • Tomatoes can be avoided.

  5. Garlic is a regular at home, i use it almost daily. Chutney looks delicious and a lip-smacking pair to our regular idly/dosa.
