A to Z Kerala recipes | Recap

Wow What a marathon this was. I thoroughly enjoyed doing this and this was the first time I was on time in planning, preparing and posting. And I also had some memorable milestones, 1 lakh page views, my 250th post !!! And I also learnt many bengali, maharashtrian, sindhi, non-indian cuisine. All my fellow bloggers participated with equal enthusiasm and we surely had a gala time.

Zero oil chicken roast

Yay!!! We are on the final day of this month long blogging marathon. And as the last recipe I am posting here zero oil chicken roast. The roast is absolutely in kerala style but very healthy without a drop of oil. This is more like a bachelor's chicken recipe. Very easy to make. 


Ingredients:

Chicken - 500 grams
Ginger-garlic paste - 2 tbsp
Shallots - 100 grams
Green chillies - 2 nos
Garam masala powder - 1 tsp
Coriander powder - 1 tsp
Chilly powder - 1/2 tsp
Pepper powder - 1/4 tsp
Turmeric powder - 1/2 tsp
Salt - to taste
Coriander / mint leaves - to garnish


 Method:


  • Clean the chicken pieces.
  • Peel the shallots. In a mixer grind the shallots, green chillies, ginger-garlic coarsely.
  • In a pressure cooker, add the chicken pieces, ground shallots, all the powders along with salt. Cook for 3 whistles. 
  • After the pressure is released, open the pressure cooker. Transfer the chicken and masala to a kadai.
  • Cook in medium flame until all the water is evaporated and the masala is well coated in the chicken.
  • Garnish with coriander and mint leaves.


Healthy chicken roast is ready!!!

Notes:

  • No need to add water for the chicken to cook in pressure cooker.
  • Non-stick kadai works best for the chicken roast since we are not adding any oil.
