Payar or Achinga payar or long beans is a regular visitor to our kitchen. I love this mezhukkupuratti so much that I end up eating it with plain rice. Long beans is a very healthy item... Long beans is low in fat and offer an excellent source of protein, fiber, folic acid and complex carbohydrates.
Ingredients:
Pacha payar - 250 grams
Onions - 100 grams
Crushed Red chilly flakes - 1 tsp
Turmeric powder - 1/4 tsp
Curry leaves - 1 sprig
Green chillies - 2 slit
Mustard seeds - 1/2 tsp
Coconut oil - 2 tbsp
Salt to taste

Mustard seeds - 1/2 tsp

Method:
- Chop the payar/long beans into 1" long pieces.
- Chop the onions into thin long pieces.
- Heat oil in a frying pan,add mustard seeds,when it splutters add the chopped onions,green chillies,curry leaves and saute till it turns to lightly brown in colour.
- Add crushed chilly flakes,turmeric powder and saute until raw smell is gone.
- Add the chopped payar/long beans and salt and mix well.
- Sprinkle some water; cover and cook until beans is cooked.
- Open the lid and stir fry until slightly browned.
Serve with rice and Enjoy!
