Ghajar ka Halwa

Carrot is another fantastic vegetable. This is one easily available vegetable which is a boon for people having eye problems. Carrot is a rich source of Vitamin A. The carrot gets its characteristic and bright orange colour from β-carotene, which is partly metabolised into vitamin A in humans. Carrot is a root vegetable, usually orange in colour, though purple, red, white, and yellow varieties exist.

The red variety is known as Delhi carrots in India. In Northern India, Ghajar ka Halwa is made out of these red carrots. Ofcourse ghajar ka halwa can be made from any type of carrots. So when I saw these red carrots in market the other day, I remembered the mouth watering halwa that I have only had from restaurants. I haven't cooked this until now. So took the recipe from palakkadcooking. It was pretty easy to make and came out to be delicious.



Ingredients:
Delhi Carrots - 250 grams
Milk - 150 grams
Sugar - 75 grams
Ghee - 3 or 4 spoons
Cashews - 10 grams
Raisins - 10 grams
cardamom powder - 2 grams



Method:

  • Peel the skin of the carrots. Wash them well. Grate and keep aside.
  • I used a non stick kadai so that the carrots don't stick to the vessel.
  • In a non-stick kadai, pour 1 spoon of ghee. Fry the cashews and raisins and keep aside.
  • Pour another 2 spoons of ghee in the kadai. Add the grated carrots and fry for about 5 minutes until nice aroma comes out of it.
  • Now add the milk. Keep stirring in high flame.
  • The milk should completely get absorbed. After this add the sugar and stir.
  • The mixture will again become watery. Now lower the flame and keep stirring until all the moisture is absorbed and the halwa starts leaving the sides of the kadai.
  • Add another spoon of ghee and the cardamom powder. Heat it for another one minute.
  • Switch off the stove, add the fried cashews and raisins.





Delicious Ghajar ka Halwa is ready!!! This is an excellent dessert. The above mentioned measurements came upto only 4 servings.
