Veg fried puttu

 Veg fried puttu is the fool proof recipe that I fall back to most of the times when I have left-over puttu. Thats because this is my favorite recipe and a pretty good way to include many veggies in your diet. I got this idea from the veg pulao or the veg rice that we make often. 
I always have stock of carrots, beans, onions, tomatoes at home. With these I feel I can manage any situation. The time taken to prepare this recipe is just 15 minutes. A quick and healthy dinner will be ready in minutes. So over to the quick recipe.


Ingredients:

Puttu - 1 cup
Onion (finely chopped) - 1
Finely chopped vegetables - 1/2 cup (check notes)
Tomato (finely chopped) - 1 small
Green chillies (finely chopped) - 1
Garam masala powder - 1 tsp
Oil - 1 tsp
Cloves - 2
cardamom - 1
cinnamon - 1/4 inch stick
ginger (finely chopped) - 1/2 tsp
coriander leaves - few



Method:


  • Steam the puttu and keep it ready.
  • Microwave the finely chopped vegetables for about 4 minutes so that they are half cooked.
  • In a kadai add oil. Add all the dry spices (cloves,cardamom,cinnamon). Fry for 10 seconds.
  • Add the finely chopped onions, green chillies and ginger. Fry until the oil turns translucent.
  • Add the microwaved vegetables and finely chopped tomatoes. Add salt. Fry until the tomatoes gets cooked and there is no water left.
  • Add garam masala powder. Mix well.
  • Add the puttu and mix well. Fry for about 2-3 minutes.
  • Garnish with coriander leaves and serve


Veg fried puttu is ready!!!


Notes:


  • I used beans, capsicum, cauliflower and carrots.
  • We can make it chinese style by adding soya sauce / tomato sauce / chilly sauce
  • I sometime add one egg in the end. Mix it with the cooked vegetables and fry until the egg scrambles and then add the puttu.

Egg Biriyani Puttu

There is a famous restaurant in Kerala in the name of "Dhe Puttu". They serve various varieteies of puttu. I haven't yet visited this restaurant but happened to see their menu in internet. In that menu I cam across the name "egg biriyani puttu". From the name I invented my own recipe and believe me it was a super-super hit at home. We can make this with ready puttu also. Need not be a left-over puttu. It is a very good lunch box option also. Do try it out.




Ingredients:

Puttu (cooked) - 1 cup
Eggs - 2 nos
Onions - 100 grams
Tomatoes - 75 grams
Ginger/garlic paste - 20 grams
Green chilly powder - 2 nos
Coriander powder - 20 grams
Garam masala powder - 15 grams
Chilly powder - 10 grams
cloves - 2
cardamom - 2
cinnamon - 1/2 inch stick
Oil/ ghee - 25 grams
Salt and turmeric powder - to taste
Coriander leaves/ Mint leaves - few


Method:


  • If its left-over puttu stored in fridge, steam it either in microwave or over stove top to make it soft and moist. Else make fresh puttu and keep it aside.
  • Boil the eggs and keep them aside.
  • Chop the onions, tomatoes and green chillies. 
  • In a kadai, pour oil or ghee. Add the cloves cardamom and cinnamon, fry for about 10 seconds.
  • Add the chopped onions, green chillies, ginger/garlic paste. Saute until the raw smell goes off
  • Add the chopped tomatoes. Fry until the mixture turns mushy.
  • Add salt, turmeric powder, coriander powder, garam masala powder and the chilly powder. Saute for one minute. Switch off stove.
  • Now layer and serve. 1st layer add puttu. Above that add one boiled egg and the masala. Add another layer of puttu. Garnish with coriander / mint leaves and serve.


I served with simple onion raitha!! Enjoy!!

Lemon Puttu

My blogger friends should have guessed by now that the second recipe should be lemon puttu since i started with tamarind puttu. I always have stock of lemon at home since it is easier to make lemon rice when in hurry. Also in case if guests come unannounced we can quickly make lemon juice. So yes it is lemon puttu for the day 2 of this week with the ingredient as already made puttu.

The first time I made lemon puttu it was kind of a disaster. Since the puttu stored in fridge is dry when i made the lemon puttu it was more dry. Recently I found a solution for this and after that twice I have made lemon puttu with success. Over to the recipe now.


Ingredients:

Left-over puttu - 1 cup
Lemon juice - 1 tbsp
Oil - 1 tbsp
Green chillies (finely chopped) - 1
Ginger (finely chopped) - 1 tsp
mustard - 1 tsp
coriander leaves - few
turmeric powder - 1 tsp


Method:

  • If the puttu was stored in fridge - follow the below procedure to make it little moist.
  • Take the puttu in a microwave safe bowl. Add 1 tbsp of water. Mix it well. Cover and heat it in microwave for 1 minute. Do not forget to cover the bowl otherwise the puttu will remain dry.
  • Alternatively you can again steam the puttu for 2-3 minutes in the puttu maker itself.
  • In a kadai add oil. Once the oil is hot add mustard seeds.
  • Once mustard splutters add the chopped chillies and ginger. Fry for about a minute.
  • Add the mustard powder and switch off stove.
  • Mix the puttu into this oil mixture. Mix well such that all the puttu granules are coated with oil and mustard powder.
  • Finally add the lemon juice and mix well.
  • Garnish with coriander leaves


Lemon puttu is ready!! I served it with boiled black chickpeas. 


Notes:

Since the puttu already had salt I didnt add any more salt. You can check for salt finally.
You can enrich the lemon puttu by adding cashewnuts or groundnuts.
